Pex conversion

I have an 80’s Class C that I’m doing a complete interior remodel on. I’m looking to convert the existing water lines over to Pex but it appears all the female fittings are a non- stock size. Anybody know if Winnebago ran a weird size female coupling back then?. Finding it extremely difficult to source these fittings. Using 1/2” pex.

How about using a 1/2" SharkBite that is supposed to work on pex or copper.

If I can find a fitting that will connect to the hot water tank (female with a 1/2 pex out the other side I can replace everything else no problem. A 3/4" female fitting is just a shade off.
