Also, solar panels put out a lot of heat. A cheap sheet of plastic corrugated board that you can get from Home Depot, cut to fit below the panels, will provide air flow and lower the roof temperature.

I'm assuming these are flexible panels, not rigid framed panels. I'm not sure why you're biased against two-sided tape. 3m VHB tape has much more holding power. Eternabond is a sealing tape and has very little tensile strength. If the top layer is damaged, it's essentially zero.

Personally, I'd adhere the panels to the roof with VHB tape and protect the front edge with Gorilla All Weather Outdoor Waterproof Duct Tape. It's UV and temperature resistant and is stronger and much easier to remove than Eternabond. For this application, you don't need the sealant properties of Eternabond. I've had some on my van for several years an it looks like new and it's parked outside in the Sacramento area summer heat.

I'm not anti-Eternabond, I use it on all my roof fittings (vents, etc.) that require sealing against leaks.

In our 2020 24D - We removed one of the existing factory installed 100 watt panels and added two Newpowa 210 watt (each) to the roof connected through the existing Zamp connector. Panels attached with mounting feet secured to the roof with double sided VHB tape. We disconnected the Zamp controller and installed a Victron 100/50 controller that will support adding more solar panels in the future.

Wiring was sufficient to provide low loss connections. The Victron controller was installed along with the two Big Battery 12V OWL MAX 2 - LiFePO4 - 228Ah - 3.018kWh batteries in the storage bay just behind the coach entry steps. Turned out to be an excellent system allowing us to boondock until the waste tanks get full.
