I'm not familiar with Instant Pot cooking, but if Hintro's experiment is representative of a typical cooking cycle, operating one via inverter/battery/alternator would be the best option. As he concluded, even without the alternator output, it has a minimal amp-hour (KW-Hr) requirement.

A crockpot, on the other hand could be very problematic through an inverter (MUCH longer run times at a constant high draw).

Why run it all day? Beans take 45 minutes. Rice takes 23 minutes. Chicken takes 30 minutes. A pot roast takes and hour and half. Prep everything, store in the fridge. When you are plugged in, dump it in and push the button. Continue to set up camp and soon dinner will be ready. After all, it's name is Instant Pot! Seems like a lot of risk and bother to try to run it while on the road.

Insta pot

Haven't tried cooking while driving yet, but one of the reasons we got the small Insta Pot was that we could cook in a short time after arrival. The pressure cooker feature helps. The locking cover is a good feature especially if you are driving.

An alternative if you want to cook while driving is get a copy of the Manifold Destiny cookbook. I have used it numerous times when I was working. Start the meal and by the time I got back to the hotel from the job site it was ready to eat.

They do all that for you? You’re the man!

A crock pot yes, but these InstantPots, won’t have a lid coming off anytime without your intervention. That said, I could become a hot missile in an accident...

Heck, I was a chef/restauranteur also, but this is all about pulling in late, and dinner is done. It has it’s place, once in awhile...

I park, set the jacks, put out the slides and plug in with the family taking care of the rest of it. Remember we are talking about the OP and their Sub C coach with limited counter, weight capacity, propane and storage space.

I do cook some foods at home and just finish them when I want something even faster. I also have a double duty 12 volt cooler/warmer with a metal liner that I sometimes use to keep foods that I prepared previously piping hot and instantly ready when we arrive however I have a 35 foot Class A with a whole lot more space and capacity than OP's Sub C coach.
