Instant Pot

Is an Instant Pot beneficial while boondocking?

Not in my opinion. But it depends. Any 120V heating device places a good load on the inverter and batteries. If you have really lots of battery capacity, then maybe OK. If you like to run your geny for how ever long you use the instant pot, then fine. Provided anyone within hearing range also does not mind your geny running for extended periods. You also make it work if you have a very large solar system, over 1000 watts. We typically plan meals that can be cooked on the grill or the propane stove top while in boondock mode.
