2018 Vista 27PE Black Tank Plumbing?

I have a 2018 Vista 27PE I cannot understand how the black tank plumbing is set up I have a macerator in a storage compartment in the pass rear with a 3 inch pipe under the toilet it has a valve in the pipe how does the waste get from the toilet through the macerator pump to the black holding tank

I think you'll find that the you have a standard blackwater holding tank. Your head drops waste directly into the black tank via gravity when the head is flushed. The macerator pump you mention is a lift pump to move the black waste fed from the black tank over to the sewer/grey water disposal hook up.
In order to empty your black tank you need to follow the directions listed in you rmanual, but here's a snap shot;
1) hook up sewer disposal hose (AKA Stinky Slinky) in wet bay
2) open 3 inch blade valve located on pass through storage compartment passenger side, directly above the macerator pump
3) open 1 1/2 inch blade valve located directly above sewer hose outlet connector in wet bay
4) start macerator pump - probably a "momentary on" switch in wet bay (means you must hold it on)
5) keep pump running till you hear pump increase in frequency, indicaton black tank is empty. Don't worry if you don't turn pump off as soon as you think tanks enpty - it's designed to run for a short time empty
5) close 1 1/2 inch black water blade valve in wet bay
6) open grey water blade valve and dump as per usual.
7) close 3 inch blade valve in storage bay above macerator.

It's a pretty cool tool; it's like a CAD program which allows you to rotate, spin, flip and peer through walls
