You can approach answering your question two ways.
1. You can install a shunt based battery monitor and through careful use and documentation figure out how much power you'll use in a typical day. Then plan a battery bank sized to meet that amount and finally figure out how many watts of solar you need to keep your batteries charged.
OR
2. You can do what most people do. Add another battery and go camping. Learning from experience how your batteries are doing at keep you going.
Then... add the battery monitor, throw up a few hundred watts of solar cells and go camping and see how that works.
Eventually, with enough experience you'll start to get an idea of what it is you need and then start looking for ways to meet that need.
The two first things I'd do in your shoes is install the shunt based monitor, a second battery (identical to the first one) and buy a 2000w quiet (Honda or other) inverter/generator.
That way you'll learn by doing and your generator will keep you from getting stranded without power.
Over time you'll be well versed in RV power needs and how to meet them.
