I did find the location of the bypass valve and under the fridge! Who knew.

Here's the info from the manual:

According to your Operator's Manual there is a single Hot Water Heater Bypass valve and it's labeled: Normal Flow and Bypass.

Normal flow for everything but winterizing and Bypass for winterizing....
