A/C issue 1999 Chieftain

Looking for a little help with a Coleman AC unit in my 1999 Chieftain. Over the past week the bedroom AC has been running a LOT. I’ve had to slide the temp on the thermostat up over 85 degrees and even then it’s cooling the bedroom down to 70-75. I’m in SW FL so it’s hot and humid here. Suddenly this morning there was water dripping onto the bed from the AC. I have a new gasket to replace the old one. But I’m wondering what else I need to look at in order to see why the AC has been running so much. Even with the temp set really high, the AC will kick on for a minute or 2 then turn off for a minute or 2, and repeat that cycle constantly. Please throw suggestions my way.

(In the pic, the top temp was after waking up in the morning a few nights ago. The bottom temp reading is from an additional sensor in the fridge so that’s a different situation completely)

Have you checked the thermostat as I suggested on the other post?

Those old thermostat sliding adjustments get worn, corroded, and stop functioning properly. I replaced mine and the new replacement was well worth the $139 from Camping World, the lowest price I found on the internet.
It has a digital readout, which is much more accurate, and is a plug N play install.
