We have a 2005 Sightseer with the Workforce chassis and 8.1l. We are currently flat towing a 2013 Chevy Spark (it came with the Motorhome) and it is a piece of cake to tow, but it’s a little small.

Is anyone flat towing something a little bigger? Any suggestions?

People are towing everything from Jeeps to full size trucks. Flat towing adds no hitch weight other then the hitch itself. Many are limited to 5000 lbs by the factory hitch. Check yours for a label.
 
We have been towing a Ford Focus for the past 6 years. It's a breeze to set up, it can be towed as an automatic and it's fun to drive. They stopped making the Focus in 2020 but there should be some available used.

We have a 2010 Adventurer 32H on the F53 and tow a 2024 Trailblazer LT. 5000# tow limit on the the rig and it doesen't even know it's there. The LT Trim is about 3200# curb wt. Plenty of room for two widebodies and a 90# pup, or a fold up ebike. Must be AWD to be towable.
 
Ford Ranger for us. It does great behind the MH. We also have a CRV that is now set up for towing but haven’t towed it yet. The CRV is 1000 lbs lighter.

We tow our 2016 Grand Jeep Cherokee which is a decent size vehicle.
