Hitch and Tailgate Issues? Micro Minnie 2108TB

We have a Winnebage 2108TB. I can't open the tailgate while hooked up. I tried turning the power jack sideways and it still won't clear. I'd like to be able to open it while hooked up, and even better be able to tow while it's open. Our recumbent trikes fit with the tailgate open. We already have stuff on the back end of the camper, so a bike carrier on the back won't work.
My question is , has anyone tried putting a short extension, maybe a 4 or 6 inch, on the receiver to move the trailer just a little further back. I'd still use the weight distribution. I'm not sure how it would tow with the extra length.

It's very likely that your tongue weight Is too much for an "extension" to extend your current hitch shank, but you can get a longer hitch shank. Here's an 18" shank that can accommodate up to 1400 lbs tongue weight.

I don't know the capacity of your pickups hitch, but when fully-loaded your trailer will have a minimum of 550# tongue weight. The extended stinger will place added stress on the hitch proper.
I've done the same thing though, when pulling a 30' loaded farm trailer I made from a TT frame, and I didn't use a WDH. My extended stinger was made from solid 2" sq steel 18" long.
Closely inspect your hitch framework every day when towing for weld cracks and/or bolt tightness and cracking after you begin using the extended stinger above.
