I believe my bathroom sink drains to the black tank instead of gray tank which causes the black tank to fill quicker. Can the drain be re-directed to the gray tank easily?

Depends on personal view of what is acceptable?
For me, short answer is "NO"!
Any move to reroute looks like it reduces the resale value to near zero!

Next time you are empty open the black valve and pour water down the sink. If it comes out your black drain you will know for sure. Otherwise it's something else.

I also have a 2024 31k. The bathroom sink definitely drains to the black tank. I feel it is an advantage because with showers and kitchen use, I always fill my grey tank more quickly.

I guess that works but when the black fills your screwed. But if the grey fills you can drain it with a hose. Like they used to do on campers by running a house from the sink drain outside and onto the ground.

I took a hose cover and put a hose bib out of it. I run a spare hose (used only for this) down hill and open the grey valve.

Some people won't like that but camper guys have been doing it for year. And by doing this, in appropriate areas, I can be 10 to 15 days dry camp. A soon as the black tank is full it's time to leave.

I think the point may be getting confused. The vanity DOES drain to the black tank but when looking at what and how to get a pipe switched over to run it to the grey, it looks nearly impossible.
That's assuming most folks will not want to step over the pipe laid on top of the floor! We don't get lots of info on where the chasssis items like driveshaft and such may/may not get in the way but I find Winnebago does give those things a lot of thought and if they did not feel they could connect to the grey, I'm going with the idea that there is going to be some massive items in that lineup!

The "easy" option that I can figure is to put a bucket under the vanity sink and when it gets full carry it across the hall to dump in the shower drain.
HOWEVER? I did mention it would pretty well destroy the value of the RV for most people!
The first problem I see is that water needs to run downhill to drain well. The drain from the sink only runs a short distance to the black water tank. But to rebuild and connect it to the grey tank which is quite a lot further away, there will be a problem of getting any slope on the pipe!
Second is that it is likely to have some big items like the drive shaft and rear axle, somewhere under there and they may be the reason the drains were built like we find.
Some things are built the way they are because there was no practical way to do it the normal way!

I had the same thing in a 24 foot Gulf Stream. Fortunately for me I figured it out at a full hookup site when the black tank filled in a few days with only two people. As others said there is no way to nicely reroute it. It is convenient for topping off the black tank when you want maximum volume and it is not full.
