New To RVing; Bought Minnie Winnie 22R

We just bought a used Minnie Winnie 22R. We are a family of three (mom, dad, kid) that travel with grandma sometimes. Our son is 10 years old and we have 2 dogs and 2 cats. We live in the Southwest and plan to use our RV to do all the big western national parks, the California beaches, nearby public lands, and to visit family in Colorado. We love Kanab as well and go to Best Friends Animal Sanctuary by Zion at least once a year so now we will do that in OUR RV. We will bring the dogs sometimes, maybe even the cats sometimes.

The unit we bought is a former rental unit so it's pretty new but also lived in. I feel like it's good to go, just pack up some stuff and start using it. However I have all these fantasies of mods. For instance, I want to create some sort of ourdoor kitchen setup. And I want solar. And we plan to add a second TV to the 'bedroom' area in the back where there are TV hookups (it came with one TV in the front already.
