Norcold Polar N8X gas mode runs continuously

Have a new to us Winnebago Vista 27PE with a Norcold Polar N8X fridge. The fridge appears to cool and freeze fine, but runs continuously when in gas mode even after getting really cold.

In Auto mode, when plugging into power, the gas will turn off as normal. Unplug and the gas re-starts. Every other gas refrigerator I have used turns off the gas when cold, but this one doesn't appear to do that. I have no clue whether it continues to run in AC mode.

Tested the thermister with a Ohm meter and it checks out. I would look at the gas valve next, but it turns off the gas when AC power is introduced, so it appears to be working??

I cant believe this is normal operation. Any other ideas out there?
