I have owned a 2101DS and currently a 2250DS. Neither one had a water heater with the mixing valve that you talked about, just a 140 degree thermostat.

There isn't a mixing valve on my WH.

I've installed the adjustable thermostat and it's working well. Installation didn't go smoothly and I had to do some modification to the bracket holding the thermostat, and spring, onto the tank. The two legs of the bracket were too long and I thought I could bend them but the metal broke when I attempted bending. I ended up drilling three small holes in the circular part of the bracket as well as three corresponding holes in the sheet metal of the HW heater cover. I then used aircraft stainless steel safety wire to attach the bracket to the water heater housing. All looks good.

Very good advice NeilV. The hot water temp in my brand new less than a week old Micro Minnie 2108FBS is 167 degrees F! Tested with a digital temp prob. As NeilV suggested, I suspect the mixing valve is the problem as well.
