Refrigerator/Propane.

Brand new owner and finally gonna take out our 2020 2108ds. At this point am confused. Read the manual and still confused. When plugged into shore power do I need the propane on to fire up and run refrigerator?

No.
If you have an absorption style fridge, simply switch it over to ac or dc.
If you don’t have shore power, switch it to lp setting.

The above is true, but don't use DC unless you are underway towing and your 7 pin connector is set up to charge your trailer's battery. Also DC is half or less of the wattage of AC so it doesn't cool as well, but is fine for maintaining the cold while driving.

If you have the standard Dometic absorption reefer, it has two modes, AUTO and GAS. In AUTO the fridge will switch from propane to AC power as soon as you plug it in and back to propane when you unplug. In GAS mode, it will run on propane even when plugged in. You don't need propane when plugged in and in AUTO mode. Just remember to switch to OFF, and prop the reefer doors open a bit when you are unplugged and not using the fridge or it will burn through your propane and battery.

No - but it does require your house batteries to be good as the fridge control circuits work on 12v. DC.

We just leave our fridge set to LP most of the time because it really uses very little, and the LP seems to work so much better in keeping a really cold freezer. Also attached a clamping device on the freezer door after having so much frost in there and not real cold temps. Turns out the OE latch was not really pulling the door tightly against the frame - allowing leaks all around. But clamping it more tightly shut not only removed almost all ice building up but allowed the freezer to be much colder.

Ratchet

Take an ice chest with frozen water containers. When you want to cool down the fridge, put the ice containers in the fridge and freezer when you turn them on. Soon you can put the food in the fridge and the fridge will be cool.

No, You only need propane when boon docking and towing.

Expect it to take a full 24-hrs to get the fridge cold BEFORE loading it.

If you load it with food and then turn it on it can take far too many additional hours to cool the whole mass down to the required temps.
