We were able to find our child tether in the forward facing dinette seat. We can connect our car seat's left, right, and top/rear LATCH straps to the one child tether. This allows us to get things really snug and keeps the car seat from rocking forward.
However, the car seat rocks from side to side significantly enough to frighten both my daughter and wife. The seat cushions in the dinette are not removable and are too soft to be supportive of the car seat.
How are other owners managing this?
We are considering wrapping a board with towel or cloth (to avoid damaging the brand new dinette seats) to try and get more stability and support.
Any other ideas that don't involve significant damage to a new RV?

I believe your covered board idea should work just fine, and I believe that will give you the best results.
Another possible option could be to use rolled-up bath towels; one under each side of the child seat. This might compress the seat cushion enough to make things more stable without needing to pack an extra piece of plywood, and maybe it would be good enough.
