Our galley fan stopped working.
Replacing it was fairly easy.
The fan housing can be removed from the ceiling by pulling off the cover (which snaps on) and then unscrewing the 8 screws holding the housing to the ceiling.
The fan assembly should now be loose. Inside the housing is a black cover over a corner inside around the fan. Remove the two screws holding the cover in place and then remove the cover.
This uncovers two screws used to connect the fan wires to the power wires. Unscrew both to disconnect the power lines from the fan - and the housing should now be loose.
The fan can be removed by unscrewing the 4 screws at the corner of the fan - the fan can then be removed from the housing.
To make it easy, the replacement fan should be a 120mm x 120mm x 25mm "case fan" with two connectors.
I purchased this fan from Amazon that moves 92 CFM:

The fan comes with a small PC connector on the end. Cut this connector off - and then add small ring terminals to the end of each wire.
Put the new fan into the housing and screw it in.
Thread the power wires from the ceiling through the hole in the housing, and then screw the housing back into the ceiling. Be careful not to overtighten - the screw holes can be stripped if tightened too much.
This may be the most difficult step. From the ceiling there should be a yellow (positive) and white (ground) wire. The fan probably has red (positive) and black (ground) wires. Connect the positive and ground wires together with the screws into the housing. There's not a lot of space, so this may take some patience.
Once this has been done, then place the black angular cover back over the wiring and screw that in. And then snap the fan cover back on.
While you may be able to order the entire fan housing from Winnebago - if the fan has died, all you probably need is a replacement case fan.
