Hi.... any thoughts why there are numerous Audio / Video wires laying on floor behind drawers in bedroom of our Vista LX ?

I believe they are likely there to accommodate a variety of options. Easier to put in a wiring harness that accommodates all anticipated options than wire to suit.

We have excess harness and plugs all over the place. Some for entertainment, some for, well who knows? As an example, we deep sized the washer/dryer, ditto the basement mounted vacuum, and re-worked the entertainment system. Next owner will be looking at those plugs and wiring runs and asking your question.

The 27N version of the Vista LX has an outside TV option that mounts in the outside wall of the slideout behind those drawers. It looks like they ran the cables for it even if yours was not built with it.

May also be a replacement set of HDMI cables linking the matrix to the TV(s) ... saved me from running another set or changing to wireless when one of our cables failed.

Our MH has many such "spare" cables lying underneath cabinets, behind drawers, etc. For instance, one option for our MH was controlling the Sony 10-CD automatic changer(near driver seat) from the bedroom via the Sony radio in the bedroom. All one has to do it download the Winnebago wiring diagrams for your particular model and compare wiring schematics to options that were available in your RV advertising brochure..
