Aux Batt Switch
What is the Aux Batt switch used to power? Everything appears to work with it off?

It disables all 12v house battery power for when you put your RV into storage.
Nothing 12v should work when it's off. Not even things that run on 12v and 110v such as your A/C units. They run on 110v but the thermostats that control them work on 12v.
By the way, this is clearly detailed in your Operator's Manual. Do you have one of those?

*Unless you're plugged in, then 12 volts will be supplied by the converter.

Is that so? I have an inverter, not a converter, but when I hit the house battery disconnect all 12v stops even if I'm plugged in.

Yes, with separate inverter and converter the disconnect switch is between the batteries and the converter. All the 12 volt loads connect to the converter.
I'd have to find a schematic (and I don't think they've posted any 12 volt stuff past the 2012 model year or so) for how the more recent inverter/charger setups are done.

I am on the inverter and not shore power, with the switch off everything appears to be working, tv, lights etc.
When it is on it starts drawing down the batteries faster than I would expect considering nothing was on at the time.

Right, diagrams for the OP's coach are online. 12V diagrams for Creativepart's are not, not sure how his is setup.
OP. You say you are "on the inverter". The original Winnebago inverter only powered the AV stuff (TV, receiver). Perhaps someone installed an additional inverter? Maybe it's hooked directly to the battery and the converter is plugged into it? That would mean the batteries are trying to charge themselves. That would draw them down quite fast.

On my Adventurer the house power disconnect solenoid switch is just below the awning LED light switch. One night with the coach all lit up, A/C running, TV on I reached down to turn off the awning lights and accidentally hit the disconnect… everything turned off. Boom, boom out go the lights.
That’s how I know that even plugged in the disconnect turns off everything on my coach.

I believe my lithium batteries were undercharged and at different levels of charge when installed. I charged each battery separately and reconnected them, the bms then put all 4 in an “equal” condition.
