Hydraulic Oil for 2004 Winnebago Itasca

Had to rebuild leveling jack (at the local hydraulic repair shop) as they were all leaking badly and stopped working (Level Best 3000). Now, these need to be installed back. If you have done this appreciate if share your experience and any helpful tips or provide any pointers:

1 - What hydraulic oil to use? The manual says to use Dexron III and also not to mix the oil but I'm not sure what is in there now - It is red in color though. On Amazon, I see the HWH brand but it is clear in color and also one Castrol which is Dexron 3 and much cheaper and highly rated (links below). I prefer Castrol.

2 - How much hydraulic oil need. Since all the 4 jacks were removed most likely there should be very little, if any oil in the reservoir.

3 - Do I need to flush the hydraulic lines. If yes, what is the proper procedure?

4 - How do you bleed the air?
