Fan noise
Periodically when connected to shore power I hear a fan kick in under the oven area on my 04 Adventurer, what is this device?

That would most likely be your converter.

Regarding the converter fan.
We had two dogs and a cat - all long haired - and I found that I had to vacuum/blow out the air inlet/outlets on the converter about once a year. Enough hair/dust would up to make the fan run way too much. After a few years cleaning it in place didn't work for very long and I had to take the converter out, take the cover off and clean it really well.
We were full timers. If you don't use your rig all the time like we did you may not have the problem.

It monitors the house battery charge and converts 120 volt shore power to charge them. All the lighting (except the light in the microwave and range hood) is 12 volt. So is the control panel for the refrigerator, water pump, and furnace blower motor.
The lighting will work with just the converter (when on shore power or with the generator running) with the batteries shut off. However the fridge, water pump, vent fans, and furnace won't. Some older models also have a 12 volt only TV in the bedroom that won't work unless the batteries are on.

That must depend on the motor home. Everything that works on 12 dc works on the converter when the batteries are disconnected in my Sightseer, including the items you listed above.

Could be a model and year specific thing. Ours was a 2001 Adventurer 32V on the Ford F53 chassis

Under the stove would be your converter! This is taking in 110V and changing it to 12V. When you hook into shore power this will come on. It recharges the house batteries and provides you 12V for the 12V coach systems. The fan noise is cooling the inside of the unit, it's normal and will go on and off as needed. IF you ever need to see the converter it is mounted on the floor and you pull the lowest drawer completely out of your cabinet and there is sits.
