Can we run AC-1 only while on 50 amp
We attempted to run only AC -1 by flipping the AC-2 breaker off on our 2010 Itasca Meridian. Both ACs went off. Is there some way we can run only one when on 50amp?

Ken do you have the duo thermostat control on your Meridian? With that you can control each AC separately.

Leave AC-2 on and turn off AC-1.
That works on my 2006 Journey. The fan motors and what not is connected to AC-2 CB. Yes it is backwards from what is expected.

Most RV parks with 50 amp, also have a 30 amp outlet in the power tower. When I want to do what you're saying, I just plug into 30 amp. It does quiet the system down if you have noise sensitive neighbors.
Oh, wait, you're probably talking about separate roof mounted A/Cs. I was referring to a heat pump.
Sorry, never mind...

Your 2010 Meridian is the same as our 2010 Journey. I'm not sure why you want to only run one compressor on the A/C. But each to his own. The basement unit isn't noisy, and works much more efficiently with automatic settings. And if you are reasonably careful, both will run off a 30amp shore pedestal. No problems at all off 50amp.
The trick is knowing how to use the thermostat. If you set the temp at 2 degrees or more below the interior temp, the second compressor should kick on after the first one runs for a bit. As long as the differential is only 1 degree, only one compressor will kick on.
We have found that with a little manipulation, you can bring temps down even with only one compressor running. Just takes longer, with some thermostat monitoring. We usually set at 78 and forget it, and on hot days, let the fans run continuously to keep the ductwork from heating up.

We have a 2015 Itasca Suncruiser 37F and we can run both a/c’s on 50 amp. Its only when we are on 39 that we can only run 1

Do you have all the other high power devices turned off when you try to turn on the 2nd A/C? Such as the water heater not on elect, switching the fridge to gas, not using the microwave. What happens when you turn the 2nd A/C on?
Other than when the A/C compressor starts each A/C should only pull about 12-13 amps for a total of about 24-26 amps, maybe less than that.

Even on 30 amps I just leave both on and let the One Place Power Management system handle shedding the second compressor. Even on a 20 amp service, though you have to manually set it to 20 amp mode, Power Management then takes care of this for you and the only time I manually take care of it by the breakers is when there are a lot of power drops that cause Power Management to continually reset.
Many times the AC1 and AC2 breakers are switched around on the Basement Air systems and you have to compensate or just change the wiring back to where it should be.
What are we trying to resolve by doing this on a 50 amp service which should be able to run the full system with ease?
